I love the snow and I love being outdoors in the snow.  My dream Valentine’s Day is a long weekend of skiing in Vermont.  Luckily we get our fair share of snow here and Vermont is only a few hours away.  There’s nothing like the feeling of flying down a frigid mountain at full speed then warming up near the fire with a nice Irish Coffee.  I’m a purist with my Irish Coffee, just a few simple ingredients – coffee, whiskey, sugar and heavy cream – nothing fancy.  But oh so warm and delicious.  I have several favorite ski resorts in Vermont, but Sugarbush in Warren, VT is at the top of my list.  The terrain is so varied, it’s perfect for all levels.  On the ride up we make a pit stop to see my family in Randolph, VT.  A quaint town in central Vermont, which also is home to one of my favorite Inns in Vermont - The Three Stallions Inn at the Green Mountain Stock Farm.  Vermont is a second home to me so sharing my love of this beautiful place with my husband (and my amazing dogs when they were alive) on Valentine’s Day is pure heaven!

If there is one thing I have always wanted to do, it is take a ride on a hot air balloon. It has been on my bucket list for years. Well that and meet Justin Bieber (I am a huge fan!!). So for me, a hot air balloon ride would help to make the perfect Valentine’s Day! I grew up in the Hudson Valley which is home to beautiful mountains, lakes and an abundance of trees. It really is a beautiful sight to see and even better from the air which is why it wasn't uncommon to see a hot air balloon gliding across the sky. I loved to see them and always wished one day I could go! My perfect Valentine’s Day would begin with a morning trip to the place I grew up. Following the arrival, a ride in an hot air balloon would take place. Seeing all the gorgeous sights would make for the beginning of an awesome day. Next up would be brunch. I love this meal because your plate can totally consist of eggs, bacon and penne al vodka! Some of my favorite brunch recipes include Quiche  and Mini Cinnamon Waffles.  To complete the perfect day would be a trip to the beautiful Mohonk Mountain House, set in a Victorian castle on Lake Mohonk. It’s a great place to get away for just a day or a whole weekend. The perfect place to relax and see the outdoors or go for a nice massage at their in house spa.  Ya this sounds like a pretty nice day guess the only thing left to do is invite the Biebs!

This will be my first Valentine’s Day as a married lady and to boot, I’ll also be 6 months pregnant!  I’m really checking things off my to-do list.  First Valentine’s Day as a wife- check!!  First Valentine’s Day as a preggo - check, check!!!  Usually I’d say that my dream Valentine’s Day would include a surprise trip to Paris.  But why torture myself by watching the Parisians drink wine, sip café au lait and eat their gooey un-pasteurized cheese?  Since I can’t have any of those things, Paris is off the wish list - I’m sure my husband will be relieved to find this out.

So since I’m feeling mostly hungry and just want my feet rubbed, I’d love to start V-Day off right with a pre-natal massage at the Peninsula Spa.  I guess we should make it a couples massage, so hubs doesn’t miss out.  Then, once we’ve been fully tenderized, we’ll cab it back to Brooklyn (the cab is an important detail here, as there is no way I’m ruining my hour of relaxation by having to ride the subway) to take a nap.  Yeah I know, it’s real exciting.  After resting our tenderized muscles for a solid hour or two, the hubs will pull the Subaru around (notice, no walking or public transport) and we’ll scoot over to Red Hook to indulge in some smoky meats at Hometown BBQ.  No it ain’t fancy, but this mama wants a pulled pork sandwich on a soft white roll with creamy coleslaw and maybe an O’Douls if they have it, PLEASE have O’Douls!  Cue: Homer Simpson drool.  We’ll eat so much that even my maternity pants will feel tight and once our hair smells completely of BBQ, we’ll make a pit-stop at Ample Hills on the way home for ice cream cones.  I’ll probably order the Salted Crack Caramel, because I hear babies love crack.  To wrap up our uber romatincal day, I’ll want to lie on the couch a bit, reveling in the BBQ scent of my hair and watch one of my all -time favorite movies.  You know the kind that makes you laugh even though you’ve seen it like 20 times?  That’s right, Step Brothers.  Because nothing says Valentine’s Day like “I still hate you, but you have a pretty good collection of nudie magazines.”

I never really know how to celebrate Valentine's Day because it always feels so forced and uncomfortable to me. It's like suddenly at dinner my boyfriend and I don't know what to talk about even though we usually eat dinner together most days. It's too much pressure. And from who?!

But I think I know how I want to celebrate this year. I want to go off the grid and really let my hair down/wear leggings as pants.  I want a weekend in a cabin out in the boonies (probably the Catskills, which I've never been to, so, apologies to those who live in the Catskills and take offense to me calling it "the boonies"). There'd be a fire pit and a fire place so we can hang by it inside or outdoors, and make s'mores. There'd also be a heart shaped hot tub because this is fiction. For sustenance, my boyfriend and I would cook this Mississippi Roast recipe and eat it with corn tortillas, onions, cilantro and tomatillo salsa. We'd drink hot toddies and maybe shoot a BB gun at some clay pigeons. I've never done the latter before but it seems like something you do when you stay in a cabin. I know. I'm such a sucker for romance.
